This easy version of the traditional Icelandic torte cheats by using plum butter,
(available in the preserves section of the supermarket) but doesn’t scrimp on flavour.
Ingredients
Cake
1 cup butter
1 1/2 cup sugar
2 eggs
1/4 cup whipping cream
4 cups flour
2 tsp baking powder
1/2 tsp almond extract
1/2 tsp vanilla
1/4 tsp ground cardamom
Filling
3 cups plum butter
1 tsp ground cardamom
Method
Heat oven to 350˚F. In a large bowl, cream butter and sugar. Add eggs, then cream and flavourings. Knead in dry ingredients. Divide dough into six parts. Roll each to 1/8″ thick. Bake on a lined sheets until golden, about 10 min. Cool. Combine plum butter and cardamom. Spread over a layer of cake. Repeat ending in a layer of cake. Ice with your favourite buttercream icing.
