Ingredients
Thai basil mango
1/2 fresh mango, cubed
1/8 red onion, cut and diced
2 Tbsp fresh-squeezed lime juice
1/2 tsp minced garlic
1 Tbsp finely chopped Thai basil
3 drops hot sauce
Salt & pepper, to taste
Pickerel cheeks
1/2 cup flour
1 1/2 tsp lemon pepper
1/4 lb fresh pickerel cheeks
1 1/2 Tbsp butter
1 slice lime, to garnish
Method
Thai basil mango
1. In a bowl, combine mango, red onion, lime juice, garlic, Thai basil, hot sauce, salt and pepper. Set aside.
Pickerel cheeks
1. In a bowl, mix together flour and lemon pepper. Dust pickerel cheeks with flour mixture.
2. Heat frying pan to medium-high, melt butter. Sauté coated pickerel cheeks in butter for 1 minute on each side.
To serve
1. Place pickerel cheeks around lime slice in centre of plate. Garnish with Thai basil mango mixture.
Yield 1-2 servings
