This meat and potatoes dish pays homage to the farmers of Manitoba. The Angus beef comes from Manitobabeef.com, a marketing venture of local cattle farmer Jim Lintott. Gourmet Adora potatoes, from Kroeker Farms Ltd in Winkler, are naturally lower in carbohydrates than other potatoes.
Ingredients
4 Angus striploin steaks
2 Tbsp olive oil
1 tsp coarse sea salt
1/2 tsp coarsely ground black pepper
4 medium potatoes
1/8 cup butter
salt and pepper
steamed vegetables
Method
Bread & Circuses uses a Rational combi-oven to prepare steaks, meaning that the meat is actually baked. The key is that heat and humidity are accurately controlled to give consistent results. At home, a special grilling pan will help retain the steak’s natural juice.
1. Brush olive oil onto steaks. Use hands to rub salt and pepper all over the steaks. Grill according to preferred method.
2. Steam potatoes until tender. Toss with butter. Add salt and pepper to taste.
