Pink Lady Drink

INGREDIENTS
1 1/2 oz gin
3/4 oz fresh lemon juice
1/2 oz simple syrup
1/2 oz housemade grenadine
1 egg white
1 brandied cherry
Grenadine
4 cups POMM wonderful
2 cups granulated sugar
2 oz pomegranate molasses
1 tsp orange blossom water
zest from 2 oranges
METHOD
1. Put all ingredients in a shaking tin.
2. Dry shake.
3. Add ice and shake hard for about 20 seconds.
4. Strain into a cocktail coupe.
5. Serve with a brandied cherry.
Grenadine
1. Slightly heat the pomegranate juice.
2. Add sugar, molasses, orange blossom water and orange zest.
3. Stir until sugar is dissolved.
4. Strain, seal and refrigerate.
Keeps for up to a month
