Many backyard trees in Manitoba produce the tart Nanking cherries,
which add a zing of local flavour to this celebratory cupcake.
Ingredients
1/2 cup butter, softened
1 cup sugar
2 eggs
2 cups flour, plus 1 tsp
1/4 tsp baking soda
1/2 tsp almond extract
1/2 tsp vanilla
1/2 cup milk
1/2 cup Nanking cherries
Method
Heat oven to 350˚F. In a large bowl cream butter and sugar. Add eggs, then milk and flavourings. Stir in sifted dry ingredients (less 1 tsp flour) until just incorporated. Toss cherries with 1 tsp flour. Gently stir into mixture. Spoon into lined muffin tins. Bake 15-25 min until toothpick comes out clean. Frost with your favourite icing.
