Turn candy making into a sweet tree trimming event
Ingredients
1 cup confectioner’s sugar
1 teaspoon cornstarch
4 Tbsp corn syrup, divided
6-8 drops red food colouring
6-8 drops green food colouring
6 Tbsp water, divided
6 Tbsp sugar
pinch of salt
2 1/4 tsp unflavoured gelatin
Method
1. Sift together confectioner’s sugar and cornstarch. Set aside.
2. To make red marshmallows, place 1 Tbsp corn syrup and red food colouring in the bowl of a stand mixer fitted with the whisk attachment. Place 1 Tbsp corn syrup, 3 Tbsp sugar, 1 Tbsp water, and a pinch of salt in a small saucepan and set over medium heat.
3. Sprinkle gelatin power over 2 Tbsp cool water and let bloom (about 2 min). Microwave gelatin in for 8-12 seconds to melt and pour into bowl of stand mixture. Mix on low while the sugar syrup heats up.
4. When the sugar syrup reaches 240°C on a candy thermometer, remove from heat and slowly pour into running mixer. Turn mixer to high and beat until glossy and tripled in volume, about 5 minutes.
5. Scoop marshmallow into a piping bag. Dust a parchment covered surface with the sugar coating and pipe long lines of marshmallow onto the surface. Dust with more sugar.
6. Repeat these steps using green food colouring.
7. Let marshmallows set
about 2 hours before
twisting red and green
ropes together.
Let set for a further
24 hours, until dry
to the touch.
