Brawny and lean, these Manitoba made patties standout sandwiched in fluffy, fresh-baked foccacia.
Ingredients
Grass-fed Burger Patties
1 1/2 lb grass-fed ground beef
1/3 cup sour cream
1 tsp dried thyme
1 Tbsp chopped fresh parsley
1 tsp ground black pepper
Burger Sauce
1 Tbsp olive oil
3/4 cup onion, 1/4″ dice
1/3 cup red pepper, 1/4” dice
1/3 cup poblano or green chile peppers, 1/4″ dice
1/2 tsp garlic, crushed
1/4 tsp dried thyme
1 cup ketchup
1/2 cup crushed tomato
1/2 tsp ground black pepper
Burger Components
4 patties
4 squares sliced focaccia
1/4 cup caramelized onions
4 pieces leaf lettuce
4 tomato slices
4 pickle slices
1/2 cup burger sauce
Method
Grass-fed Burger Patties
1. In a large stainless steel bowl use your hands to mix all ingredients together.
2. Form approximately 3/4 cup of mixture into patties, using hands.
Burger Sauce
1. Heat oil over medium-high heat, add onion, garlic, peppers and thyme. Cook for 10 min.
2. Add ketchup, tomato and pepper. Continue to cook for
10 min. Remove from heat
and cool.
Assembly
1. Place patties on hot grill and cook to well done, about 4 min per side.
2. Put cooked patty on bottom half of bun, layer with burger sauce and onion. Place lettuce leaf on top half of bun, followed by tomato and pickle.
3. Assemble and serve.
