Each golden flake of these crispy parcels is complemented with creamy, tangy goat cheese and glass-like slices of caramelized red onion.
Ingredients Red Onion Compote 1 red onion, sliced 3/4 cup balsamic vinegar 1/4 cup sugar Goat Cheese Parcels 4 sheets phyllo pastry 1 cup goat cheese 1 Tbsp melted butter Method Red Onion Compote 1. In a medium pan, combine all ingredients. 2. Heat mixture over high heat and bring to a boil. 3. Turn heat down to low and reduce for 10 mins until onions are tender and most of the liquid has evaporated. Goat Cheese Parcel 1. Preheat oven to 350°F. 1. Brush phyllo with butter. 2. Place 1/4 cup goat cheese at the bottom of each phyllo. 3. Fold pastry sides in and roll the bottom of the phyllo to the top. 4. Bake for 10-12 mins. Assembly 1. Garnish parcels with red onion compote. Yield 4 servings
