The earthiness of mushrooms matches well with these bold flavour pals. This pan perfectly balances the salty feta and olives with sour lemon juice, and spicy herbs and garlic.
Ingredients
2 lbs white button mushrooms
1 cup sliced red onions
1/4 cup sliced green onions
1 cup diced tomato
2 Tbsp chopped garlic
12-15 kalamata olives
1 cup feta cheese, crumbled
1 Tbsp thinly sliced basil
1/4 cup white wine
6 Tbsp olive oil
3 Tbsp lemon juice
2 Tbsp butter
salt, pepper, oregano to taste
Method
1. Sauté mushrooms with oil, butter and olives until mushrooms brown.
2. Add lemon juice, white wine, garlic, tomato, red onion, and let simmer until mushrooms are tender.
3. Top with feta and green onions. Broil in oven for 2 min. or until feta melts.
