This hefty version is fully loaded with fresh toppings
punched up with bold garlicky flavour.
Ingredients
1/2 cup black olives, chopped
1 tomato, diced
1 green pepper, chopped
1 onion (white or red), chopped
2 cloves garlic, minced
5 anchovy fillets, chopped
2 Tbsp olive oil
2 tsp salt
1 tsp oregano
1/2 cup shredded mozzarella cheese
2 thick-sliced pieces of bread
garlic butter
Method
1. Preheat oven to 350˚F.
2. In a medium bowl, combine olives, tomato, green pepper, onion, garlic and anchovies.
3. Add oil, salt and oregano. Mix well.
4. Spread garlic butter on bread.
5. Spoon on a layer of bruschetta mix on top of each bread slice.
6. Sprinkle a light layer of mozzarella on top.
7. Bake slices for 8-10 mins until cheese is golden.
8. Slice each piece in half.
Yield 4 servings
