Stella’s Café and Bakery
The ultimate weekend morning breakfast is made with egg batter-drenched, pan-fried brioche-perfect to sop up every sweet drop of Stella’s maple caramel sauce.
Ingredients
Maple Caramel Sauce
1 cup demerara sugar
1/3 cup unsalted butter
1/3 cup maple syrup
1/3 cup whipping cream
French Toast
4 large eggs
1/4 cup white sugar
1/2 tsp vanilla extract
1/2 cup homogenized milk
non-stick cooking spray
9 slices of brioche
3 tsp ground cinnamon
3 sliced bananas
3/4 cup wild blueberries
6 butter pats
3 orange wheels for garnish
Method
Maple Caramel Sauce
1. Combine all ingredients in small saucepan over medium heat, stir constantly.
2. Once at a gentle boil continue to stir while simmering for 5 min.
3. Remove from heat, cool at room temp.
French Toast
1. Thoroughly blend together first 4 ingredients.
2. Spray heated grill with non-stick spray. Fully submerge each slice of bread into egg mixture and place on grill.
3. Sprinkle bread with cinnamon.
4. Cook to golden brown on each side.
Assembly
1. Plate French toast. Top with a banana, 1/4 cup blueberries and 1/3 cup maple caramel sauce. Garnish with butter and orange wheel.
