Sneak in a healthy daily dose of greens with spinach in this perfectly spiced vegetarian curry.
Ingredients
1/2 cup heavy cream
3 cloves garlic
1/2 white onion, diced
3 Tbsp curry powder
1 tsp cayenne
1/4 tsp ground ginger
1/4 tsp ground coriander
1 Tbsp cumin
1 540 ml can black beans, drained and rinsed
2 Tbsp sugar
1 cup water
1/2 cup butter
1 Tbsp salt
1 Tbsp black pepper
10 new potatoes, boiled and cooke
1 medium bag of spinach
Method
1. In a medium saucepan, combine all ingredients over medium heat.
Cook until spinach is wilted, around 5 mins.
Yield 10 servings
